500g Blueberries (can use frozen)
Add the blueberries and sugar to an appropriately sized sauce pan and heat till sugar has melted, now add the water, heat this to a simmer and reduce the sauce by 1/3.
Using a Food processer, blitz the syrup till the berries are coarsely blended
For smooth syrup, blitz completely, then strain
Let the syrup now chill, store the syrup in the refrigerator till used
