Blueberry compote
750ml Water
500g Blueberries (Frozen will do)
300g Sugar
Method:
Add the blueberries and sugar to an appropriately sized sauce pan and heat till sugar has melted, now add the water, heat this to a simmer and reduce the sauce by 1/3.
Using a Food processer, blitz the syrup till the berries are coarsely blended
For smooth syrup, blitz completely, then strain
Let the syrup now chill, store the syrup in the refrigerator till used
Green Tea infused Milk
Simmer 250ml milk with 2 – 3 green tea bags for 10 – 15 minutes, strain and reserve until ready to use. It will keep in the refrigerator for 2 – 3 days.
Lime Leaf infused Milk
Simmer 250ml milk with 2 – 3 green tea bags for 10 – 15 minutes, strain and reserve until ready to use. It will keep in the refrigerator for 2 – 3 days.
